As an extension to choosing which columns show by default on an "Item-type", you can also control in which order the columns are displayed. You can also remove "System property columns" such as "Project" using this feature. To change the order of the columns navigate to "Admin" -> "Item types" -> "Edit item type" -> choose "Additional":
